Makes 4 cups
This is the lightest of all my Blends—yet since it’s a cruciferous vegetable, it has incredible health benefits. Blending also makes it easier for your body to absorb cauliflower’s beneficial phytonutrients. Win win! Note: You can totally swap in frozen cauliflower florets here, if you’d like. Just run them under cold water to thaw them a little before putting them in your blender.
7 cups cauliflower florets (about 2 small heads)
Place a steamer basket into a large pot, pour in a few inches of water (make sure the water is below the bottom of the basket) and set it over high heat. Add the cauliflower and steam, covered, for 9 to 11 minutes, until fork tender. Remove from heat and puree cooked cauliflower with ¼ cup of water until smooth, adding more water as necessary.
