COFFEE-CHIA BREWSICLES

This is a great afternoon pick-me-up when you hit an energy low and need a little caffeine. Plus, the healthy fat and fiber in the avocado and the blend will sustain you until dinner. Tip: You can blend up extra servings of these pops and enjoy them as a refreshing, icy coffee drink, if you prefer.

1 teaspoon chia seeds
1/2 cup brewed coffee
1 cup Blueberry–Baby Spinach Blend
1/4 ripe avocado
1 to 2 tablespoons raw honey
Dash of ground cinnamon optional

Soak the chia seeds in the coffee for 5 minutes.
Puree the coffee, chia seeds, and remaining ingredients until smooth. 
Pour into 4 popsicle molds (about 1/3 cup of coffee mixture each, depending on the size of your mold) and freeze.
